It's been awhile since I have been tagged for a meme and this one looks like fun! Thanks I have to share recipies for "dinners that are delightful" that I make. First off I have to say this. I don't cook. When I do cook it's only because hubby is not home to take over the cooking or to do it himself. He loves to cook. When we first met we fought over the kitchen and in the end he won. Plus he is a professional cook and learning as he goes! So when I do actually get to cook I do kid friendly meals to make sure the crew will eat it. So my time in the kitchen is normally just kid foods that is not that hard to make. Though a few times I have thrown hubby out of the kitchen and made:

1.Stuffed Chicken.
Easy...don't know if I can find a link on the net for this one so I will write it out:

Boneless Skinless Chicken Breasts
Pepper Jack Cheese
Seasonings of your liking.

Thin out the chicken place cheese on the chicken and fold it over. Hold it in place with a toothpick. Season the chicken. I like to use Adobo, salt, pepper, and sometimes lemon pepper.
Bake until the chicken is cooked.
This is awesome stuff. Though it seems like I am missing something but do know this works as well! Gives the chicken some flavor! If you don't like Pepper Jack cheese use one to your liking!

2. BBQ Meatballs
For this one I cheat. I use frozen meatballs for this. And BBQ sauce out of the bottle.
So its a bag of meatballs
BBQ sauce
Liquid Butter...I use parkay.
Hot Sauce
Now don't let the hot sauce here scare you. I don't do hot foods but I can do this!
Put meatballs in crock pot. Cover with BBQ sauce. Add the butter. I can't give measurements as this is add until it looks and tastes right. Guess I will have to sit down the hubby and figure out them out for you. And then add hotsauce. A few shakes of the bottle is all you need.
Simmer in the crock pot until done.
Note: I will update this when I can give better measurements.

A Chip dip
Cream Cheese
Refried Beans
Salsa
Shredded Cheese
In a small brownie pan spread the cream cheese on the bottom add a can of the beans then the salsa and then top it off with the shredded cheese. Bake in the oven at 350 until the cheese is melted on top and the cream cheese looks like its melted( I use glass for this)
A very tastey chip dip that fills you up!

I tag:
Monkeys and Princesses,
Honey Bell
And whoever else wants to play along!

I'm not much of a cook either, but I know I'll have to learn especially when J starts eating REAL food. My recipes are really simple as well. All my cookbooks have "quick" and/or "easy" in the title :)

Love the recipes--I'm a sucker for meatballs and BBQ--yummy!

Thanks for dropping by! Hope to see you again.
